This tasty salad recipe multiplies easily to serve one or many.
Ingredients
3 tablespoons herb and garlic flavor cheese (such as Rondelé or Boursin
cheese)
2 tablespoons seasoned Rice Vinegar
1 prepackaged garden salad (about 6.5 oz.)
1 cup roasted chicken meat, shredded
1/4 cup roasted red peppers, drained
1 ounce fresh mozzarella cheese, cut into small chunks
Instructions
1. In a small bowl, mix together the cheese and vinegar until smooth.
Set aside.
2. Transfer salad to a medium-size serving bowl. Add chicken, peppers, and
cheese mixture. Toss gently just until salad is evenly coated with
dressing. Sprinkle with mozzarella chunks.
